Copenhagen’s Nimb Hotel hosts Michelin-starred pop-ups

Copenhagen‘s Nimb Hotel is hosting an unprecedented lineup of Michelin-starred pop-ups in a 50-seat Japanese Pagoda, tucked inside Tivoli Gardens.

Each chef is creating a fully immersive menu that blends local ingredients, global technique and a once-in-a-lifetime atmosphere, as guests take in distant Tivoli carousel music as they dine.

So far, Chef Nicolas Min Jørgensen from Restaurant Tri, has brought the unique flavours of North Jutland’s coastal region to Copenhagen, showcasing seasonal ingredients like oysters, seaweed and pinecones.

The 2025 programme is still to welcome Three-Michelin starred chef Tristin Farmer of Gleneagles, Claridges and Maze by Gordon Ramsey, who presents an innovative blend of Nordic and international cuisine, building on his celebrated work at Zén in Singapore.

Later in the season, from Madrid, Executive Chef Massimiliano Delle Vedove delivers a two-Michelin-starred experience where smoke enhances every dish, blending Japanese and Spanish haute cuisine.

Singapore’s renowned Odette, led by Chef Julien Royer, will also bring three-Michelin-star French gastronomy with subtle Asian influences for a multisensory dining experience.

Finally, Barcelona’s COME by Paco Méndez celebrates Mexico’s Día de los Muertos, offering a modern twist on classic Mexican dishes in a festive, Halloween-themed pop-up.
