Gallic pop-up restaurant to launch in Mexico City

A new pop-up restaurant with a Gallic twist is set to launch at an Ambrosi & Etchegaray Architects-designed hotel in Mexico City.

ONA Le Toit will open in Círculo Mexicano, a 19th-century grand house with 24 rooms and suites behind the city’s cathedral, on 16 April 2020. It represents the latest international project for Luca Pronzato’s ONA pop-up series after Costa da Caparica (Portugal), Basel, Paris, Lisbon and Zermatt.

At the invitation of Pronzato, prominent chef Romain Tischenko – known for his work at Le Galopin and La Cave à Michel in Paris – will lead the pop-up at the property, part of Mexican hospitality group Grupo Habita. The intimate restaurant will have just 20 seats in the main space as well as a further eight in a private area, and Pronzato and Grupo Habita will choose the furniture throughout, which will be made by interdisciplinary design studio La Metropolitana.

For his part, Tischenko will create a seven-course tasting menu showcasing French cuisine using only Mexican ingredients. The menu will also change from week to week as the team explores Mexico’s cultural heritage, making extensive use of cooking over an open-fire pit, which has become one of ONA’s signatures.

ONA plans to serve lunch and dinner at the venue, in addition to running a bar serving natural wines. The pop-up will run until the end of June 2020.
