From trailblazing chefs to cutting-edge concepts and innovative design, 2025 was a defining year for F&B in hotels worldwide.
In Asia–Pacific, resort-led grandeur dominated the conversation. The opening of JW Marriott Kaafu Atoll, with six vibrant venues, brought fresh energy to the archipelago’s F&B scene. In Australia, lifestyle hotels continued to invest in food and drink. Mondrian Gold Coast debuted a coastal restaurant concept imbued with Italian flair, while Melbourne Place also took inspiration from the Mediterranean, adding to the city’s already formidable culinary landscape.
Meanwhile, Europe once again proved its pulling power, as Boulevard 73 at Corinthia Bucharest reinforced the city’s growing luxury credentials, delivering a polished fine-dining experience within a revived former ballroom. And in Spain, Royal Hideaway Corales Villas continued the Canary Islands’ F&B evolution, with signature restaurant, Crater, putting the region’s distinct culinary identity into the spotlight.
Over to the Americas, and in the Big Apple, The View at New York Marriott Marquis returned, reclaiming its revolving place among the city’s dramatic eateries above Times Square. On the West Coast, chef Charlie Palmer tapped into the growing appeal of wine-country dining at Appellation Healdsburg in Sonoma County, and in the US capital, Sixty DC emerged as a design-forward addition to Washington’s foodie scene.
The Middle East and Africa also delivered some of the year’s most high-profile openings. In Dubai, chef Manav Tuli’s Bombay Club at Jumeirah Marsa Al Arab debuted within one of the world’s most anticipated hotels. And in East Africa, &Beyond Suyian Lodge in Kenya won praise for its elevated safari dining experience with expansive savannah views.
The outlook for 2026 is equally encouraging. According to data collated by THP, there are 7066 projects in the pipeline globally, 2641 (37%) of which are slated to open in the coming year. With that in mind, we’re keeping a close eye on the restaurants and bars set to launch over the next 12 months.

Bel Hôtel Oléron – MGallery Collection, France
Set within a protected Natura 2000 site in Saint-Trojan-les-Bains, Le Bel Hôtel Oléron brings Michelin-starred chef Pierre Gagnaire to the island of Oléron. His menu celebrates the meeting of land and sea, spotlighting seasonality, local farmers and the island’s maritime heritage, with Oléron oysters featuring as a signature dish. Opening in April 2026, the property features a main restaurant with terrace, chef’s table, two bars and a beach club.

Waldorf Astoria London Admiralty Arch, UK
This landmark London opening brings together two of the world’s most celebrated chefs. Clare Smyth debuts Coreus, a fine-dining tribute to Britain’s seas and coastal regions showcasing a deep commitment to British producers, while championing both iconic and lesser-known seafood varieties. Meanwhile, Daniel Boulud returns to London with Café Boulud, an all-day rooftop destination spanning breakfast, afternoon tea and dinner, and featuring the chef’s signature French-American classics.

The Selvedge, A SingleThread Inn – Healdsburg, USA
A complete transformation of the historic River Belle Inn, The Selvedge is the latest project from the SingleThread team. Operating as an all-inclusive bed and breakfast, The Selvedge draws inspiration from traditional British hospitality (including afternoon tea and Sunday roasts) while maintaining the group’s signature focus on hyper-seasonality and deep connections to Sonoma Valley producers.

Amelia by Paulo Airaudo – Hotel María Cristina, San Sebastián
Michelin-starred chef Paulo Airaudo brings his acclaimed Amelia concept to the foodie haven of San Sebastián. The intimate restaurant features an open kitchen, 12-seat counter and two tables, offering a refined, Italian-inspired omakase tasting menu shaped by seafood, technical precision and global influences, all set within Hotel María Cristina’s Belle Époque surroundings.

Delano Miami Beach, USA
Delano Miami Beach will return as a tribute to the city’s creative soul, blending preserved Art Deco heritage with modern touches. The reimagined hotel features four dining and bar concepts, including Rose Bar, which once hosted Hollywood royalty and the who’s who of Miami society. Meanwhile, inspired by 1920s Osaka and the Japanese avant-garde, Mimi Kakushi from Rikas Group fuses eastern flavours with bold western influences.

Sale e Pepe Mare – The Langham, London, UK
Inspired by the Italian coastline, Sale e Pepe Mare reimagines the classic Knightsbridge restaurant with a seafood-focused menu served from breakfast to dinner. Classic dishes include lobster linguine, salt-baked whole sea bass and a range of refined crudo and pasta, highlighting the best of British and Mediterranean seafood.

Chablé Valle de Guadalupe, Mexico
Chablé Valle de Guadalupe, the newest addition to the Chablé Hotels portfolio, is situated in Baja California Norte, Mexico’s largest wine region and an emerging world-class producer. Led by chef Jorge Vallejo, the culinary programme celebrates the bounty of local ingredients and products. Ecological commitment is at the heart of the resort, which holds EDGE certification and has been designed by Cuaik CDS to incorporate native materials, such as stone and wood, using regional techniques throughout.

Bvlgari Resort Ranfushi, Maldives
Set on a private island in the Raa Atoll, Bvlgari Resort Ranfushi introduces Italian elegance to the Maldives. Culinary highlights include Il Ristorante by Michelin-starred chef Niko Romito and Japanese omakase concept Hōseki, forming part of a four-restaurant dining programme.

Mercer Madrid, Spain
Housed in a protected 1905 landmark building, Mercer Madrid pairs architectural heritage with modern gastronomy. The hotel’s fine-dining restaurant will be helmed by Eneko Atxa, one of Spain’s most influential chefs, whose restaurants collectively hold five Michelin stars. Known for his commitment to sustainability and innovation, Atxa brings refined Basque gastronomy to the Spanish capital as part of Mercer Hoteles’ expanding luxury portfolio.

Waldorf Astoria Rabat Salé, Morocco
Located in the Mohammed VI Tower, Waldorf Astoria Rabat Salé offers diverse culinary experiences with multiple dining venues in the heart of Morocco’s capital. Think fine-dining menus crafted by Michelin-starred chef Alain Ducasse, relaxed Mediterranean dining by the pool and Asian fusion cuisine with creative cocktails.

Corinthia Rome, Italy
Located in Campo Marzio, Corinthia Rome’s F&B programme is curated by Carlo Cracco in collaboration with Executive Chef Alessandro Buffolino. The offering spans three distinct venues: Ocra Bar, for cocktails and light plates with a backdrop of Roman sunsets; Viride, the signature restaurant focused on contemporary Italian cuisine shaped by seasonality; and Piazzetta, an all-day dining concept serving classic Roman dishes in the hotel’s internal courtyard.

The Lake Como Edition, Italy
Signalling Edition Hotels’ arrival in Italy, The Lake Como Edition is developed by Omnam Investment Group in partnership with Bain Capital. Featuring a multi-venue dining programme led by Mauro Colagreco, the three-Michelin-starred chef of Mirazur, the lineup includes fine dining at signature restaurant Cetino and relaxed poolside seafood and Riviera-inspired lobby drinks and bites. The project marks Colagreco’s first venture in Italy.
