Chewton Glen Hotel & Spa in Hampshire, part of Iconic Luxury Hotels, is set to unveil reimagined F&B spaces designed by London studio Goddard Littlefair.
At the heart of the hotel is The Dining Room, home to a series of distinct spaces. The sunlit Orangery and Summer Room feature a soft, natural palette inspired by the hotel’s woodland setting, alongside lush botanicals and potted plants that bring the outdoors in. Expansive terraces with outdoor seating invite guests to enjoy al fresco moments.
New seasonal menus pay tribute to the coastal terroir, with fresh British seafood and fish, complemented by produce sourced from local farmers, trusted New Forest suppliers and the hotel’s own heritage orchards and kitchen gardens.
Signature dishes include halibut t-bone with sea vegetables, lobster and tarragon sauce; rod and line caught seabass with fennel purée, brown shrimps, lilliput capers and preserved lemon; and Somerset saxon chicken with romesco, courgette and marcona almonds.
The Tasting Room, with its mirrored ceiling and plush banquette seating, shifts with the rhythm of the day. In the morning, it becomes an open pantry, where a wooden harvest table is laid with seasonal breakfast favourites: artisan sourdough with British cured meats and cheeses, hand-baked granola with Greek yoghurt and Chewton Glen’s own honey, flaky pastries, signature Dorset apple cake and a Bloody Mary station featuring New Forest tomato juice and Isle of Wight Mermaid vodka.
By evening, the space transforms into a retreat for wine lovers and culinary explorers. Chewton Glen’s expert sommeliers, chefs and mixologists host wine tastings, gastronomy masterclasses and exclusive chef’s evenings.
The Colonel’s Bar has also been redesigned. A tribute to its namesake, Colonel Tinker, the oak-lined bar features tartans, tweeds and rich scarlet tones. Deep velvet sofas and crackling hearths offer a cosy winter atmosphere, while in summer, French doors open onto a terrace overlooking the croquet lawn.
Shelves are stocked with rare single malts, amber-hued brandies and Iconic Luxury Hotels’ own Iconic Gin, used in cocktails like the Fitz Peach and Marryat’s Mint Julep. Light bites include Dorset lobster rolls in homemade brioche, New Forest summer salads and charcuterie and cheese boards showcasing the region’s finest artisanal produce.
Goddard Littlefair has also reimagined the hotel’s drawing rooms. Now fully restyled, the interiors blend earthy greens, inky tones and natural wood finishes, inspired by the spirit of travellers who have long passed through the New Forest.
Here, guests can enjoy afternoon tea with homemade cakes, strawberries and cream and a selection of fine British teas, alongside a light lunch menu. As twilight falls, the space becomes a setting for pre-dinner oysters and caviar, Champagne and fine wines. Later, the chef offers cheese pairings and homemade chocolates to round off the evening.
