The Ritz-Carlton, Langkawi welcomes Mambow’s Abby Lee

The Ritz-Carlton, Langkawi is set to welcome Abby Lee, Chef Patron of London’s Malaysian restaurant Mambow, in a two-day culinary takeover.

Lee will present two menus showcasing her signature modern Peranakan cuisine with a celebration of regional influences from Langkawi.

Taking over the hotel’s Langkawi Kitchen, perched atop 30-foot stilts amidst ancient rainforest, Lee’s line-up will feature a selection of Mambow signatures from her London restaurant with a flavoursome ode to Langkawi including local ingredients and botanicals sourced from the hotel’s Nibong Garden.

Highlights include otak otak prawn toast with pickled birds’ eye chilli, Umai Sarawak with Andaman sea bass ceviche chilled with starfruit granita bringing the zing and the showstopping Kari Kepala Ikan fish head curry.

The Mambow sambal receives a regional twist inspired by Langkawi’s Sambal Kerisik Ikan Rebus, a sweet protein-rich dish combining toasted grated coconut with locally caught boiled mackerel. For dessert, Lee presents the indulgent Kuih Bingka with fudgy cassava cake and toasted rice ice cream.

An afternoon tea menu by Lee will offer sweet and savoury kuih inspired by local ingredients, folklore and legends of Langkawi. Savoury options include Pulut Panggang with dried shrimp sambal, Chicken Lor Bak and Sardine Karipap while sweet highlights feature Kuih Dadar and Kuih Bakar Pisang baked banana cake with coconut.

Lee also reimagines the hotel’s classic club sandwich with the Mambow Sando. Available until the end of the year the Hainanese Chicken Sando features tender chicken tossed in ginger and spring onion with chicken fat chilli, Kewpie mayo and vegetables served between soft pandan loaf, the perfect poolside indulgence.

Born to Malaysian parents from Penang and Sarawak and raised in Singapore and London, Lee draws inspiration from the rich and diverse flavours of her upbringing. Known for preserving family recipes while interpreting traditional dishes for modern dining, she now brings her celebrated regional approach back to Malaysia in a region she has yet to explore.
