Red Carnation Hotels introduces Stanley’s, a new rooftop bar at The Chesterfield Mayfair.

Inspired by the legacy of the hotel collection’s founder, Stanley Tollman, Stanley’s will welcome guests year-round with expansive views over the prestigious corner of London.

The rooftop space features a fully retractable roof and offers room for up to 60 guests. Upon arrival, they are welcomed by a walkway lined with Saudade in Yellow, a cubist-inspired artwork featuring interwoven facial profiles and vibrant hues. Warm burnt-cedar decking frames the space, while a bespoke mosaic of Stanley Tollman – crafted by Maggy Howarth Studio – sits beneath the feet.

The cocktail list features refreshing spritzes, elevated gin and tonics and Stanley’s Signature Cocktails – from the crisp Stanley’s Martini to Thymes in Paris, a fragrant blend of gin, thyme, blackberry liqueur and foam, and the bold Passion for Chilis, a mix of chili-infused vodka, passion fruit and lime.

Meanwhile, a sharing-style food menu includes standout dishes such as grilled chicken satay skewers with a classic peanut sauce, native lobster rolls in toasted brioche and the indulgent Neal’s Yard aged cheddar toastie – all prepared using locally sourced ingredients.

As Red Carnation Hotels continues to evolve and invest in its global portfolio – with recent openings such as 100 Princes Street in Edinburgh and extensive refurbishments across the collection – Stanley’s stands as an expression of the brand’s founding ideals.

“Red Carnation Hotels began with my parents, Bea and Stanley, who welcomed guests in the same way they welcomed friends into our home,” explains president of the collection, Vicki Tollman. “The red carnation was my father’s signature flower – a simple yet powerful symbol of warmth, generosity and genuine care. Stanley’s is a tribute to that spirit – a place where every guest feels personally looked after and truly at home. It embodies the heart of who we are as a family and as a brand: creating spaces filled with character, comfort and connection, where every detail reflects a deep love of hospitality.”
