Mr Lyan unveils Seed Library NYC at Hotel Park Ave

Bartender Ryan Chetiyawardana, also known as Mr Lyan, has opened Seed Library NYC, his first permanent bar in the city.

Located on the lower ground floor of Hotel Park Ave NYC, Seed Library NYC is a collaboration between Mr Lyan, Lore Group and Renwick Hospitality. Inspired by the original site at One Hundred Shoreditch in London, the concept reimagines the creativity of the original while embracing New York’s bar heritage.

The cocktail menu includes 17 original drinks, featuring Seed Library classics adapted with local flavours, such as the C.R.E.A.M Margarita with Lalo Tequila, Mezcal, passionfruit, cream ATOM, pickled chilli and lime, and the Coriander Seed Gimlet made with Beefeater Gin, coriander seed cordial and white grape.

Signature creations such as Shepherd’s Delight and the Pear + Apple + Tonic highball highlight inventive flavour combinations, alongside spirit-forward serves including Irish Treacle, a twist on the Old Fashioned. Alcohol-free options include S&P Spritz and Thai Basil Soda, while a selection of Lyan Classics from previous London venues rounds out the menu.

Alongside the cocktail menu, a concise menu of bar snacks created in collaboration with Renwick Hospitality reflects the same ethos of thoughtful simplicity found in the drinks programme. Highlights include a Cheese Dip featuring whipped feta alongside salsa verde and crispy naan bread; Loaded Tots crispy tater tots served with spicy herb aioli, pancetta and pecorino sardo; Lyan Burger with English cheddar, bacon and gherkins served on a potato roll.

Designed by Lore Group Creative Director Jacu Strauss with RD Studio, the interior combines organic textures and natural materials to reflect the bar’s philosophy of embracing nature’s variance.
