The Woodcote and Peter Mikic plan bistro and fine-dining restaurant

The Woodcote in West Sussex has secured planning approval to transform the site of its historic pub into a country lodge and dining destination.

The consented scheme restores the cottage that forms the original pub building, transforming it into a village bistro, while introducing a new flagship fine-dining restaurant alongside 16 guest suites.

Together, these elements reshape the site into a low density countryside retreat designed to serve both the local community and visitors.

Landscape architect Studio Engleback is shaping the project around the character of the surrounding countryside. Meanwhile, McLean Quinlan leads the architectural design process with a focus on proportion, material integrity and a sensitive response to landform, ensuring the lodge sits naturally within the folds of the South Downs.

Interior designer Peter Mikic offers strategic interior consultancy, advising on spatial flow, room proportions and the overall guest journey. The focus is on intuitive circulation, generous room sizes and the seamless integration of practical detail.

The bistro provides a space centred on quality, seasonality and simple, well-executed dishes. While informal in atmosphere, it remains underpinned by the same commitment to sustainable practices and locally sourced produce that defines The Woodcote’s philosophy.

The new flagship fine-dining restaurant has a clear ambition to establish itself as a Michelin Green Star destination, grounded in sustainability and local provenance. Its focus is on responsible sourcing, close relationships with South Downs farmers and growers, and a long term commitment to environmentally conscious hospitality.

The approved scheme delivers meaningful biodiversity improvements, including woodland planting, meadow creation, orchard establishment and restored hedgerows. Lighting will be low-level and carefully controlled to protect the integrity of the night sky.
