Hilton Molino Stucky Venice introduces Shades of Venice cocktail menu
Hilton Molino Stucky Venice on Giudecca Island has announced the launch of Shades of Venice, a new signature cocktail menu at Skyline Rooftop Bar.
Offering a sensory journey through the city, the drinks list is inspired by Venice’s contrasts of light and shadow, water and stone, and openness and intimacy.
Built around six distinct colours, each representing an aromatic profile inspired by a specific place and moment in Venice, the menu invites guests to explore cocktails according to their mood, the time of day or their preferred level of intensity. Each colour features drinks created across four intensity levels, ranging from alcohol-free serves to after-dinner cocktails.

The four intensity levels shape not only the alcohol content but also the character of each drink. Silent offers elegant alcohol-free creations, Light delivers fresh aperitivo-style cocktails, Mild introduces greater depth and structure, while Dark presents rich after-dinner serves with a more dramatic profile.
The collection also features an intuitive icon system and an interactive digital experience, allowing guests to discover their ideal cocktail while learning more about the inspiration behind each creation.
Among the signature flavour journeys, Rubra is inspired by the deep reds of Venice’s historic palaces and noble fabrics, combining rich pomegranate notes with warm spice and depth. Mercato captures the energy of the city’s morning markets through mandarin, citrus and grape, while Solara pays tribute to Venice bathed in sunlight, blending pineapple and coconut with subtle bitter notes. Giardino evokes the herbal aromas of a hidden Venetian garden in the late afternoon, and Vespro combines sweetness and spice in a tribute to the city’s unforgettable lagoon sunsets.
