NoMad Hilton Singapore reveals distinct dining and cocktail concepts
NoMad Hilton Singapore has revealed three distinctive dining and bar concepts plus a poolside lounge, ahead of a late 2026 opening.
Marking the brand’s debut in Asia-Pacific, the 19-storey property on Orchard Road will embody NoMad’s signature approach to luxury hospitality. Offering an evolving service from day to night, each F&B venue will invite guests to connect and immerse in thoughtfully crafted food, drink and social experiences – from the hotel’s reception through to its rooftop.
Offering a sophisticated blend of classic brasserie and New York-style chophouse, the NoMad Grill is designed to feel both timeless and inviting. Celebrating dry-aged meats from around the world cooked over wood fire, alongside pristine seafood and seasonal produce, tableside moments will nod to the grand dining traditions of New York, reimagined for Singapore.
Elsewhere, Sticky Fingers marks a new concept for NoMad. By day, it crafts house-made gourmet soft serve sundaes, inspired by classic nostalgia sprinkled with adult decadence. By night, the space transforms into an intimate cocktail bar where desserts and drinks intersect through inventive pairings and unexpected flavour combinations.
Finally, The Tropicana Club is NoMad’s vibrant craft cocktail bar, inspired by the golden age of cabaret and the exotic glamour of Havana in the 1940s and 1950s. Drawing influence from both Havana’s legendary Tropicana Club and Singapore’s own pioneering Tropicana Club, the venue reimagines the spirit of these iconic destinations through a contemporary lens. The cocktail programme is rooted in the great classics of the era: martinis, daiquiris, manhattans and cuban cocktails, alongside tropical drinks inspired by Havana, elevated with ingredients and influences from Singapore and Southeast Asia.

Lú Bar will provide an additional poolside location, offering a quiet sanctuary with lush greenery and soft furnishings. Guests can enjoy aperitivo cocktails and refreshing drinks during sun-soaked days, with artworks and design nods that celebrate the symbolism of the venue’s namesake, the heron.

Leo Robitschek leads NoMad’s global cocktail programme, garnering international accolades including the James Beard Award for Outstanding Bar Program and recognition on the World’s 50 Best Bars list. “Singapore is one of the most exciting food and beverage cities in the world,” he comments. “Our goal is not simply to bring NoMad to Singapore, but to create something that feels genuinely connected to the city and its culture.
“Each venue has been designed with its own identity and energy, while sharing the warmth, generosity and sense of occasion that define the NoMad experience. We want these spaces to become destinations for both travellers and locals alike.”
NoMad also announces the appointment of Josh Harnden as Global Culinary Director at NoMad. Harnden brings more than two decades of culinary leadership across Michelin-starred restaurants and concept-driven openings. His career includes a defining tenure at Eleven Madison Park, where he served as Partner and Creative Culinary Director, and includes roles at One White Street, The Noortwyck and NoMad NYC kitchen.

Harnden will be joined by Lorenz Hoja as NoMad Singapore’s Director of Culinary. Hoja brings a wealth of international experience shaped by a career spent in some of the world’s most acclaimed kitchens across England, France, Austria, the Maldives and Singapore. He spent more than a decade working alongside chef Joël Robuchon, including at Singapore’s two-Michelin-starred L’Atelier de Joël Robuchon.
