The Piccolo at Paso Robles Inn unveils rooftop restaurant led by chef Charlie Palmer
The Piccolo at Paso Robles Inn in California has unveiled a new rooftop dining destination led by Michelin-starred chef Charlie Palmer.
The opening of Salina Rooftop marks the second of three dining concepts arriving at the property this year as part of a wider effort to revitalise its culinary programme, following the debut of the Western-inspired Cattlemen’s Bar.
Overlooking downtown Paso Robles, Salina Rooftop draws inspiration from California’s Central Coast, combining lush planting, firepits and panoramic views with a menu centred on seasonal, shareable dishes. Designed by EDG Design, the space extends the surrounding landscape onto the rooftop through layered greenery, locally sourced vintage pots and a custom botanical mural by California artist Hollis Callas, depicting the Salinas River.
The food menu celebrates regional produce through live-fire cooking using Gozney pizza ovens, with signature pizzas including The Salina and Central Coast Shroom, alongside sharing dishes such as lamb shish kebabs, grilled shrimp cocktail, seasonal salads and baked-to-order Lasagna made with caramelized onions, zucchini, spinach and béchamel.

Cocktails continue the garden-led theme, incorporating fresh herbs grown on site. Signature serves include the Peat & Pineapple, Cherry Blossom Sour and A Big Fig-Ing Deal, while a dedicated zero-proof selection features drinks such as Big Basil Energy and Tropic Like It’s Hot.
The opening forms part of a $13 million investment to transform the culinary offering at the historic Paso Robles Inn and marks the second phase of the partnership between Peregrine Hospitality and Charlie Palmer Collective.
