Waldorf Astoria Rabat Salé opens Alain Ducasse’s first restaurant in Morocco

Waldorf Astoria Rabat Salé has announced the official opening of its signature restaurant, Aldabaran, a culinary destination helmed by chef Alain Ducasse and his first restaurant in the Morroco.

Located on the 33rd floor of the Mohammed VI Tower, the restaurant is named after one of the brightest stars in the sky and pays homage to the history of Arab astronomy, echoing the celestial motifs woven throughout Waldorf Astoria Rabat Salé.

At Aldabaran, Alain Ducasse presents a tribute to the Mediterranean. Inspired by the French Riviera, the restaurant has been developed in close collaboration with Alain Ducasse’s team, who have played an integral role in shaping the menu, culinary operation and service philosophy.

Aldabaran is one of the few restaurants in Alain Ducasse’s portfolio to offer a dedicated breakfast experience. Mornings unfold with homemade pastries, Alain Ducasse’s signature cookpot of eggs and mushrooms crowned with delicate shavings of Wagyu ham, and warm madeleines brought to the table in their individual moulds. In the afternoon and evening, petit farcis, gambero rosso with ricotta tortellini, and lamb with caponata are among the dishes that highlight the restaurant’s focus on purity of flavour and harmony of ingredients.

That philosophy extends to sourcing, which pairs Mediterranean inspiration with ingredients from across Morocco. Chef Morgan Perrigaud works closely with local producers, including L’Agrumiste, whose orchard near Fès is home to more than 250 varieties of citrus, from bergamot and yuzu to rare lemons and mandarins, bringing distinctive flavours and aromas to the menu.

The same emphasis on terroir is reflected in the wine programme. Guests can explore the diversity of Morocco’s vineyards through a selection showcasing the country’s distinctive wine regions, alongside a curated collection of French labels, from Bordeaux and Burgundy grand crus to niche producers from the Rhône and Loire valleys.

Designed by Pierre-Yves Rochon, whose vision shaped both Waldorf Astoria Rabat Salé and Aldabaran, the restaurant combines contemporary interiors with references to Moroccan craftsmanship and Rabat’s Art Deco heritage. Its curved design echoes the architecture of the Mohammed VI Tower, while floor-to-ceiling windows offer views across Rabat, Salé, the Bouregreg Valley and the Atlantic Ocean.

Throughout the space, traditional Moroccan craftsmanship is reflected in hand-crafted zellige, damascene-inspired detailing and pottery in black and gold tones. Art Deco influences are expressed through geometric forms, graphic detailing and black timber flooring with black-and-white accents.
