Jorge Colazo joins The Westin London City as Executive Chef

The Westin London City has announced the appointment of Jorge Colazo as Executive Chef to mark the debut of Westin Hotels & Resorts in the UK.

Colazo joins the 222-key property, which is due to open later this year, with over 20 years’ experience gleaned in kitchens across the globe.

As Executive Chef, Colazo will hold responsibility for curating menus, bringing his skillset to life by showcasing ingredients at their very best and incorporating his signature cooking style; fresh, innovative and elaborate as well as contemporary and eclectic in the techniques and flavours it incorporates.

Growing up in Argentina’s Patagonia, Colazo graduated from the Argentine Institute of Gastronomy and Le Cordon Bleu. He grew a passion for experiencing new cultures and cuisines, travelling extensively, honing his skills and crafting his signature cooking style. From Argentina to Spain, and Mexico to the US, Colazo has worked in a number of top restaurants including the three-Michelin starred Arzak in San Sebastián, La Bourgogne in Buenos Aires, El Peregrino Relais Chateaux Hotel in Navarra, Asiate at the Mandarin Oriental Hotel in New York, and two-Michelin starred Aquavit New York.

Moving to London in 2017, Colazo was Head Chef at Aster and Aquavit London, then a Michelin-star restaurant. Jorge’s cuisine reflects all of these experiences and is driven by passion and dedication which he promises to bring to the Westin London City hotel.

The Westin London City will be a key part of the redevelopment of the former Queensbridge House site, as well as an independently operated destination restaurant. The city’s latest ‘bleisure’ destination, the hotel is situated between the City and London’s sightseeing spots.
