Chef Tom Brown returns to Knightsbridge

Chef Tom Brown has opened the doors to his new flagship restaurant, Tom Brown at The Capital, bringing his bold, ingredient-led cooking to the heart of Knightsbridge.

Located within Capital Hotel, where Brown first rose to prominence as Head Chef at Outlaws, the intimate 28-cover dining room marks a celebrated return and new chapter. The restaurant showcases the chef’s distinctive style; clean, creative and flavour-forward dishes with a focus on sustainably sourced seafood.

Brown and his team take a nose-to-tail approach to seafood, crafting each dish to honour the full potential of every element, from underused cuts to developing unexpected pairings.

The restaurant offers refined tasting menus, showcasing the finest ingredients through skilful techniques and imaginative flavours.

The menu begins with Mussel, port and beetroot, Charcuterie and an Oyster, followed by dishes such as Tuna with soy and quail egg and Crab custard.

Main courses feature Cuttlefish “tortellini” crafted entirely from fish and John Dory with roast chicken and asparagus, followed by Alphonso mango, pistachio and lime for dessert.

Guests can choose from a three, six or eight-course menu during lunch, with ten-courses for dinner.
