Hélène Darroze at The Connaught launches Taste of Summer menu

Three-Michelin-starred Hélène Darroze at The Connaught has launched its latest creations in Taste of Summer.

Rooted in British, European and global ingredients and inspired by memory and terroir, the new menu is a personal journey through flavour. Whether nostalgic, geographical or textural, each creation is designed around one significant ingredient chosen for its provenance, and reflecting Darroze’s relationships with her producers and sensitive approach to storytelling.

Spread over seven courses, dishes include red mullet from Newlyn near Land’s End on Cornwall’s south coast, served with fregola, Taggiasca olive, marjoram and saffron; piglet from Arras in France, served with cherry, black pudding, Barolo and Tropea onion; and chocolate from Araguani in Venezuela – a 72% single origin dark chocolate served with cardamon, almond and cocoa bean.

Each culinary offering is brought to life under the direction of Executive Chef Marco Zampese. With a deep understanding of seasonality and intuitive handling of produce, Zampese, who has been at the London hotel for over a decade, plays a key role in the restaurant’s evolution.
