Hotel Gabrielli in Venice now sits within the Starhotels Collezione portfolio and has unveiled a new culinary philosophy that champions local traditions while embracing a contemporary twist.
Led by native Venetian and Executive Chef Mirko Pistorello, all of Hotel Gabrielli’s gastronomic spaces have been designed to offer an all-day dining experience, with restaurant Felice al Gabrielli and K Lounge Bar taking centre stage.
Felice al Gabrielli was named after former hotel guest Frank Kafka’s muse, Felice Bauer, and provides an intimate, refined setting that opens onto a quiet internal courtyard. The restaurant’s à la carte menu showcases signature dishes including Risi e Bisi with Bassano asparagus and pea peel powder, and Millefoglie di gambero in Saor with parsley gel and pine nut mayonnaise.
Meanwhile, K Lounge Bar drawns inspiration from the flavours of the lagoon with its food and beverage programme, and up on the Terrazza Gabrielli, panoramic views are paired with traditional Venetian cicchetti and signature cocktails meticulously crafted by Bar Manager Diego Filippone.
“The Hotel Gabrielli project is both a thrilling and meaningful milestone for me,” says Chef Pistorello. “It’s a privilege to work in a place so steeped in history and beauty, within a group like Starhotels that shares my culinary philosophy: honouring roots without forcing them, treating raw ingredients with reverence and telling the story of this region through each dish.
