Rosewood Hong Kong has announced that Chef Daniel Humm will be taking up a five-day plant-based residency at the hotel. Held in collaboration with New York’s three-Michelin-starred plant-based restaurant, Eleven Madison Park, the event will bring together two leading names in sustainable dining and responsible hospitality between 14 and 18 November 2023.
The eight course plant-based tasting dinner menu takes inspiration from Eleven Madison Park’s signature offerings, with dishes accompanied by wine pairing options curated by Eleven Madison Park’s Wine Director, Gabriel Di Bella. Intended to showcase the wide-spanning potential of plant-based dining, and to demonstrate that culinary prowess can go hand-in-hand with sustainability, the event is an embodiment of Rosewood Hong Kong’s commitment to move luxury hospitality in a more sustainable direction.
Throughout the event, Chef Daniel Humm will be sharing details of his culinary career, as well as his passion for sustainable living and plant-based recipes, with students from the Hong Kong Vocational Council’s International Culinary Institute, a Rosewood Empowers partner.
“As part of our Rosewood Impacts initiative, we are thrilled to partner with three-Michelin-starred plant-based restaurant, Eleven Madison Park, to offer a purpose-led fine dining experience to our discerning guests,” said Hugo Montanari, Managing Director of Rosewood Hong Kong. “The collaboration has further strengthened our commitment to supporting our local communities, from using homegrown produce to inspiring the sustainable culinary leaders of the future.”
