Accor launches in-house F&B group, Table For

Accor, the largest hotel operator in Australia and New Zealand, has launched a new in-house food and beverage group designed to set new standards in culinary experience, creativity and commercial performance. Entitled Table For, the group’s first restaurant, Flaminia, is set to open at Pullman Quay Sydney Harbour.

Building on the foundations of an existing portfolio of 440 restaurants, bars and cafes in the Pacific, Table For’s focus expands on culinary investment and guest experience, aiming to create venues that are creatively led, operationally sharp and culturally resonant.

Operating as a full-spectrum group, Table For unites internal Accor experts across culinary, operations, design and guest experience, supported by select collaborators including Stefano Catino and Vince Lombardo of the Maybe Group, and culture agency, Example.

Table For’s remit spans existing and new venues and concepts, all shaped by guest insights, local relevance and best global practice. “We love the way culinary experiences bring people together, and with Table For we’re taking that to an entirely new level,” says Adrian Williams, Chief Operating Officer, Accor Pacific. “This initiative unites our finest visionaries in food and beverage to create restaurants and bars that are bold, culturally inspired and operationally smart.

“We are redefining what it means to dine in a hotel and treating our restaurants and bars as standalone heroes that locals and travellers actively seek out. This is about celebrating creativity, elevating our guest experience and delivering real value for our partners.”

Table For will not only service Accor-managed properties, instead supporting the group’s wider network of owners, developers and franchise partners. Through its partnership with Ennismore, Accor is rolling out headline hospitality concepts across Australia – Hyde Melbourne Place, the new Mondrian Gold Coast, and the soon-to-open 25hours Sydney The Olympia, which will be home to the Mulwray Bar and the Sydney debut of London’s acclaimed Palomar under Culinary Director Mitch Orr.

Creative development is already underway for Table For venues, with the first, Flaminia, an inspired collaboration with Chef Giovanni Pilu, set to launch later this year alongside several other exciting concepts in Sydney. “After a tremendous period of momentum across our F&B portfolio, we’re excited to move into this next phase,” says Head of Table For, Ben Creek. “Only with even greater focus, creative ambition and long-term investment.”
