Portugal’s Anantara Vilamoura Algarve has boosted its culinary offering with the launch of a new restaurant, Sensai.

Drawing on the country’s seafaring history along the Spice Route, as well as Anantara’s Asian heritage, the new venue brings the fragrant flavours of the East to the Algarve. Helmed by Japanese-Brazilian Chef Fabio Terada, it offers diners a culinary journey through China, Japan, India and Anantara’s native Thailand, through dishes that celebrate modern Asian cuisine infused with the freshness of Portuguese ingredients. In addition to an omakase experience crafted using the seasonal catch of the day from local waters, menu highlights include ramen cozido a portuguesa, a fusion of a classic Japanese noodle soup with a Portuguese comfort stew, and omakase premium, 54 mouth-watering pieces of local fish, prawns, lobster and oysters with caviar.

Elsewhere, the resort has updated its menus at the alfresco Ria restaurant, a tribute to traditional Portuguese seafood bistros, celebrating the seafood catch of the day from the nearby Ria Formosa with fish-centred dishes in street-food and more classic formats. Highlights include the signature corvina ceviche and Ria frito misto served with garlic mayo. The hotel has also introduced a Food Truck serving up Portuguese street-food dishes this summer.
