Daniel Rose plans all-day French brasserie for St Regis London

Le Perroquet, a new restaurant from Michelin-starred chef Daniel Rose, is set to open at St Regis London.

The all-day French brasserie marks Rose’s first restaurant in London, a city he has long admired for its layered history and cosmopolitan appetite for dining. Known for his deeply personal approach to French cooking, Rose sees the brasserie not as nostalgic, but as a living practice: a place of ritual, appetite, conversation and pleasure.

Following a celebrated career in Paris and New York, including Michelin-starred Le Coucou and acclaimed La Bourse et La Vie, he has built a reputation for refining the classics whilst retaining their heritage. At Le Perroquet, he brings that philosophy to Mayfair, creating a brasserie that feels both timeless and culturally inspired.

The menu returns to the foundations of French cooking, with expertly crafted sauces, carefully prepared vegetables, roasting as an art form and desserts designed to comfort as much as they delight.

Rose will work closely with Executive Head Chef Robert Aikens. Having previously worked together in New York, the pair share a commitment to consistency, discipline and a style of hospitality that is warm, attentive and instinctive. Together, they envision Le Perroquet as a true brasserie in spirit: open, welcoming and vibrant from morning until night.

“For me, the brasserie is one of the most complete forms of a restaurant. It’s not about invention – it’s about doing things properly, with attention and care,” Rose comments on the opening. “It should feel alive, and part of the city around it. That’s what we hope to create here.”
