Denū Hotel & Spa opens in Phoenix with three F&B venues
Denū Hotel & Spa has opened in Downtown Phoenix, becoming the latest addition to the Meritage Collection.
The 236-room property, developed through a partnership between Pacific Hospitality Group, Berger Holdings and JWG Investments, an affiliate of Sunbelt Holdings, brings together wellness facilities, a rooftop plunge pool and three F&B venues.
Drawing on the flavours of the Sonoran Desert, the hotel’s culinary offering spans all-day dining at Sartén Kitchen & Bar, Latin-Mediterranean small plates at Nidos Rooftop Bar and speciality coffee at Blend Café.
At the heart of the offering is Sartén Kitchen & Bar, a modern Sonoran restaurant with a menu showcasing regional ingredients including desert citrus, mesquite, chiltepín, blue corn, agave and heirloom grains, alongside responsibly sourced meat and seafood. Highlights include fire-roasted bone marrow, cast iron mesquite cornbread, ceviche verde, fire-tossed elote and a 14-ounce prime ribeye.
On weekends, the restaurant hosts Gather Brunch, a sharing-style experience for groups of four or more. The menu features warm pastries, seasonal fruit, artisan cheeses, sharing plates and a seasonal dessert, with a cast iron cinnamon roll baked to order and finished tableside with warm mesquite honey butter.

Meanwhile, Sartén Bar draws on the same regional influences for its cocktail programme, incorporating smoke, desert botanicals, agave, roasted spices and charred fruit. The indoor-outdoor bar and patio also hosts live music and a regular happy hour. Overlooking the Phoenix skyline, Nidos Rooftop Bar serves Latin-Mediterranean small plates alongside a cocktail menu featuring the Ranch Agua and Guava Frosé. Food offerings include wagyu sliders and Nidos nachos, while live music and DJ sets extend the rooftop’s offering into the evening.
Completing the hotel’s F&B portfolio is Blend Café, a street-level coffee shop serving speciality teas, artisanal pastries, bone broth and grab-and-go options. Equipped with a custom Italian-made La Marzocco espresso machine, the café offers speciality coffee and espresso, with a walk-up service window on Adams Street.
