Eastwind Hotels has expanded its boutique portfolio with the launch of a new Catskills property that brings its signature Scandinavian-inspired accommodation to the state of New York

Dubbed Eastwind Oliverea Valley, the 30-key hotel offers up sumptuous all-weather, wood A-frame freestanding cabins evoking the Scandinavian sentiment of hygge. And a focus on the outdoors means that guests can ride complimentary bikes along nature paths, join sunrise yoga sessions, take part in creative seasonal workshops or head out on foraging walks, while seasonal activities include skiing, horseback riding, fly-fishing and hiking.

The third property from the portfolio’s founders Bjorn Boyer, Julija Stoliarova, and Dan Cipriani also comes with an exciting F&B programme, led by Dandelion, the first full-service restaurant outside of the five boroughs from co-founder and chef Cipriani. The New York culinary star – who is behind some of Brooklyn’s favourite restaurants, such as Urban Rustic, Sea Wolf, Playland Motel, Lodge and Gemelli – has quit the city for the nature of the Catskills and Adirondacks, sharpening his foraging skills and building relationships with local farmers. His plant-forward, ‘forage-to-table’ menu at Dandelion is described as offering international comfort food, with an all-day offering of select seasonal cocktails and small plates served daily. Dinner will be served Thursday through Sunday evenings, with menu highlights including Lohikeitto – a Finnish salmon chowder – and house made gnocchi with trumpet mushrooms, as well as nightly specials based on what’s seasonally available via foraging and local sourcing.

The hotel’s hearty F&B offering also spans breakfast baskets for in-room delivery, s’mores kits for snacking around the firepits, cocktails at the bar, and – weather-permitting – meals prepared on the open flame Argentinian grill. Outdoor private dining with prix fixe menus is also available to guests.

“When conceptualising our latest Eastwind instalment, we knew we wanted to offer a true resort experience with an enhanced amenity program that would keep guests engaged during the entirety of their visit,” says co-founder Boyer. “At the Oliverea Valley property, we’ve created more opportunities for guests to gather, lounge, and unwind together.”
