Galvin at Windows celebrates anniversary with menu curated in partnership with Perrier-Jouët

Galvin at Windows, the fine-dining restaurant and bar at London Hilton on Park Lane is marking its 15th anniversary with an exclusive menu in partnership with Perrier-Jouët.

From 10 June, Head Chef, Marc Hardiman will celebrate the dining destination’s most-loved dishes of days gone by, with help from the restaurant’s previous kitchen team.

Curated by the five head chefs that have shaped the fine-dining destination over the years, this one-off birthday menu will transport diners back in time and will embody the respective chef’s time at the restaurant.

A starter of crab lasagne with beurre nantaise will be created by Chef Patron Jeff Galvin; the first course of kimchi risotto by Joo Won (2013-2020); the second course of confit Loch Duart salmon with broccoli, crème fraîche & caviar by André Garrett (2006-2013); with the main of dry-aged grass-fed beef fillet, short rib tartlet, yeast carrot & lovage by current Head Chef Marc Hardiman (2020 to present). Completing things accordingly with sweet temptations will be Chef Patron Chris Galvin with his famed signature dessert Apple Tarte Tatin.

The drinks offering continues the celebratory tone with the cuvées of Perrier-Jouët, who’s long-standing connection to nature is brought to life by a flower wall in the entrance of the restaurant, welcoming summer.

Head Sommelier Rudina Arapi, has selected a pairing for each of the five dishes, highlighting the French and Asian flavours that have influenced the restaurant throughout the years.

The starter of crab lasagne will be paired with a glass of Perrier-Jouët Blanc de Blancs – a vibrant champagne brimming with crisp citrus and fresh floral notes, which is a timeless expression of Perrier-Jouët’s emblematic Chardonnay grape.

The unique and rich flavour combinations of Joo Won’s kimchi risotto have been matched with a lively, spicy Gewürztraminer from Alsace, France 2017, leaving a well-balanced sweetness of tropical fruit flavours on the palate.

Meanwhile, Marc Hardiman’s grass-fed beef fillet has been paired with a plummy, warm and soft 2016 Château Tayac from Margaux, France, with aromas of black fruits and notes of oak and vanilla. The birthday cocktail, created using Plymouth Gin, has been crafted to celebrate the upcoming Great British Summer.

Perrier-Jouët joins hands with Galvin at Windows in embarking on a new chapter, having recently appointed Séverine Freson as the new Chef de Caves, the eighth to ever hold this position and the first female since its founding in 1811.

The Birthday Menu will commence at a Launch Party on 10 June, where all five Head Chefs will be present to cook and elaborate on their dishes and journey at Galvin at Windows.
