Hotel Café Royal’s Green Bar launches new seasonal menu and terrace

Hotel Café Royal‘s Green Bar is launching a new menu and outdoor terrace with a series of brand collaborations.

As part of the Green Bar refresh, Matteo Carretta, Director of Beverages at Hotel Café Royal, has worked with the team to create a menu that marks the changing seasons and champions natural ingredients.

Paying homage to the London hotel’s storied past and the legacy of William J. Tarling, Head Bartender at Café Royal in the 1930s and author of the infamous Café Royal Cocktail Book, the menu features high-end spirits, spotlighting independent distilleries and specialist producers.

The new menu has been divided into three key offerings:

Unique Experiences – A celebration of rare spirits, including drinks such as the d’Azur Negroni, the Suave Mirror Margarita and the Seventy One Gold Martini.

Seasonal Pairings – Pairings include Gin & Olives, using No. 3 Gin and some of the world’s best olives, Scotch & Mango, made with Glen Grant and mango purée to bring out the mango flavours in the Scotch, and a Mezcal & Ancho, which includes Motelobos Mezcal and Ancho liqueur.

Signature Classics – Celebrating timeless recipes from the original Hotel Café Royal Cocktail Book, published in 1937, drinks include F.E. Morland’s ‘Crazy Crossing’, J. Stephen’s ‘New Victoria’ and J.E. Johnson’s ‘Incognito’. Another Signature Classic is the Café Royal Special, created by William J. Tarling, a refreshing combination of Hendrick’s Gin, Boatyard Sloe Gin, honey syrup, crème de mûre and lemon juice.

For those looking to go alcohol-free, the new menu also offers a host of options including Peach & Hibiscus, Mango & Ginger and Basil & Apple.

To mark the opening of the new outdoor terrace, Hotel Café Royal is partnering with a handpicked selection of spirit companies. The first terrace partnership was a celebration of Martini Month in June with Berry Bros. & Rudd, the capital’s longest-serving wine and spirit merchants.

From July, the Green Bar will be celebrating the British rye harvest season in collaboration with Fielden Rye Whisky, a sustainable rye whisky.
