Hotel Metropole Monte-Carlo has announced the return of ZIA, the Italian culinary experience curated by world-renowned chefs Manon Santini and Rocco Seminara, bringing Italian flair to the French Riviera.

Following the success of last year’s pop-up, ZIA offers both guests and visitors an all-day dining option with breakfast, lunch, aperitivo and dinner available.

Located at Odyssey, the hotel’s poolside restaurant designed by Karl Lagerfeld, Colazione da ZIA, or breakfast, includes homemade pastries, pancakes, ricotta fresca with flower honey, and the signature pandoro French toast. Later in the day, ZIA del Mezzogiorno, or lunch, dishes range from Sicilian style branzino, gamberoni rossi and tigelle di Modena, as well as classic pizzas with a modern twist, including one option  topped with cacio e pepe. To round off the day, ZIA Cena awaits, including refined antipasti and gourmet pizzas. For dessert, indulgent special dessert pizzas are on offer, exclusively created by Manon Santini, who won the title of World Champion Pizza Dessert in Rome in 2019.

Rocco Seminara’s culinary creations celebrate the flavours of the Mediterranean. As the 2016 winner of the prestigious Neptune prize, which was awarded by world-renowned chef Joël Robuchon, he joined the kitchens of the Bagatelle Monte-Carlo. In 2018, he was appointed Executive Chef at Hotel Byblos in Saint-Tropez, before joining the Bagatelle Group in 2021 as Executive Chef.

Manon Santini took part in several internships before joining Chef Rocco Seminara at the Hôtel de Paris in Monaco, winning the prestigious Neptune prize alongside him in 2016. After an initial stint in the kitchens of Bagatelle Monaco, Manon became Head Chef at Hotel Byblos’ Cucina restaurant under the leadership of Alain Ducasse in 2019. That same year, she won the title of World Champion Pizza Dessert in Rome, before being appointed Head Pastry Chef of the Bagatelle Group in 2021.
