Edition Hotels has announced that Australian chef Josh Niland will helm the signature restaurant at The Singapore Edition. The ethically-sourced seafood concept will be Niland’s first restaurant outside of Australia – a sustainable, modern-age, seafood-focused steakhouse. 

With nods to old-world elegance and traditions, the signature restaurant at soon-to-launch The Singapore Edition will reflect Chef Niland’s recognised passion for seafood. Also focused on creating a circular economy within the restaurant and lobby bar, the chef has ensured the mitigation of waste throughout.

Niland’s creations will use ingredients carefully sourced from producers, growers and artisanal suppliers to present a menu of fish cut to order, including rib on the bone, crown roasts and cutlets.  

The restaurant’s menu will be a la carte, with the venue open for breakfast, lunch and dinner.
