NoMad London unveils Twenty8 NoMad, a bold, New York City-inspired bistro that brings its signature culinary experience to London.
Led by chef Bryce Shuman, NoMad’s culinary director, Zak Gregoire, NoMad London’s Executive Chef and Pastry Chef Martha Hernandez, the restaurant offers a fresh take on authentic New York cuisine.
The bistro’s name pays tribute to the iconic addresses of the group’s New York and London counterparts: NoMad New York located on 28th Street in Manhattan, while NoMad London sits at 28 Bow Street, a historic landmark in the heart of the city. Designed by Martin Brudnizki Design Studio, the venue reimagines the classic palm court with a moody and playful charm.
At its heart is a grand wood-burning hearth, while Brudnizki’s signature style emerges through lush greenery, eclectic trinkets and layered textures, with woven rattan elements nodding to the vintage palm courts of the late 19th and early 20th centuries. A rich, earthy colour palette of deep browns, lush greens, and spicy mustards grounds the space.
A tribute to avant-garde photographer Napoleon Sarony sets the artistic tone of the space. Sarony, known for his striking portraits of Oscar Wilde, created his legacy in a studio near Union Square Greenmarket, the same neighbourhood where chef Bryce Shuman would shop for ingredients during his early morning market visits. Wilde himself was famously tried at 28 Bow Street when the building served as a Magistrates’ Court and Police Station, adding another layer of historical resonance to the venue. Sarony’s celebrated photographs, including portraits of Wilde, are exhibited throughout the restaurant.
The culinary experience at Twenty8 NoMad reflects NoMad’s tradition of blending influences from its geographical roots, interpreting New York cuisine through the lens of its chefs. The menu embraces moments of New York nostalgia, reimagined with French brasserie inspiration. Crudités recall Shuman’s early market trips, the grilled flatbread features a secret dough recipe from a beloved Little Italy pizzeria, and NoMad Chicken, served with black truffles and foie gras, carries forward the legacy of NoMad New York’s most coveted dish.
The fire-roasted Galician Blond Steak, inspired by classic New York chophouses, and an extensive raw bar selection highlight the menu’s depth. The seafood offerings celebrate fresh catches from both the British Isles and the U.S. East Coast, with a seafood tower honouring Gregoire’s childhood on Nantucket and a refined take on the prawn cocktail.
The cocktail programme, curated by NoMad’s Vice President of Food & Beverage, Leo Robitschek, offers a journey through New York mixology across the ages. A dedicated Twenty8 Martini Menu traces the evolution of the martini, from its origins to contemporary interpretations like the Twenty8 Martini, garnished with smoked olives and blue cheese.
Elsewhere, the Modern New York Classics collection pays homage to the city’s influential bartenders, featuring reimagined versions of cocktails such as Penicillin, Clover Club and Leo’s Sherry Painkiller.Other inventive reinterpretations of timeless drinks, include a caprese sour and a white negroni inspired by flaked guava and cheese pastries.
The wine programme, led by NoMad London’s Wine Director Alessia Farrarello, reflects the convivial spirit of New York’s family-style dining, featuring half-bottle carafes that encourage guests to explore diverse varieties. The list balances classic, esoteric and obscure selections with a strong emphasis on provenance and ethos, with Nebbiolo emerging as a prominent focus, a personal favourite of Farrarello.
