Rockwell Group has designed the latest addition to Santorini resort, Sandblu. Blending elegance with a modern Greek aesthetic, the all-day dining destination is set atop a terrace overlooking the Skaros Rock, the Aegean Sea and the Caldera, a Unesco World Heritage Site.
The thoughtfully curated environment echoes the island’s natural beauty, boasting an expansive white marble terrace and interiors that blend harmoniously with the volcanic terrain and Santorini’s blue-hued landscape, inviting the outside in.
The Blu menu is globally influenced yet soulfully rooted in Greek heritage with fresh, regionally sourced ingredients that showcase the island’s vibrant flavours from both land and sea.
Dinner service features Greek salads, quality dry-aged cuts of Greek veal and Spanish Black Angus, fresh catch-of-the-day, and shareable plates such as sea bass crudo, smoked aubergine and semi-cured scallops. Signature dishes include lobster pasta with bisque, tomato, boukovo, basil and sweet wine of Samos and shredded oxtail with paccheri pasta, graviera cream and summer truffle. Decadent desserts include Aegina pistachio with pistachio cream, goat’s milk ice cream, forest fruit sauce hibiscus meringue and pistachio sponge cake.
The day-to-night beverage menu serves a robust list of spirits, fresh juices, soft drinks and signature cocktails such as the Katsouni Gimlet with Greek gin, katsouni cucumber cordial and fresh lime juice, and the Rum Away With Me, featuring white rum infused with Greek herbs, passion fruit purée, homemade orgeat syrup, and lime juice. Brunch libations include the Bloody Marika with tsikoudia infused with florina pepper, tomato juice from Santorini, Worcestershire sauce, black pepper, oregano and salt, and the Wake Me Up Before You Coco with kola nut infused vodka, mastic coffee liqueur, espresso, and cocoa foam.
