Rosewood Amsterdam reveals new restaurant focus
Eeuwen at Rosewood Amsterdam is introducing Mediterranean-inspired flavours, new cocktail experiences and an evolving approach to all-day dining.
Rooted in conviviality and the rhythm of nature, the restaurant’s latest evolution invites guests to enjoy long lunches, spontaneous aperitivo moments, lively dinners and relaxed terrace gatherings. Eeuwen, meaning “Centuries” in Dutch, reflects the Dutch appreciation for the art of time in relation to food: knowing when to harvest, when to savour and when to prepare.
Led by Chef de Cuisine David Ordóñez, the restaurant continues to develop its culinary identity through seasonal dishes focused on craftsmanship, provenance and effortless hospitality. Alongside the à la carte offering, Eeuwen has expanded its dining programme with dedicated lunch menus for business occasions, pre-theatre menus, celebratory holiday menus and a signature Sunday brunch designed for slower afternoons in the city.

The menu begins with a selection of refreshing small plates designed for sharing, including Zeeuwse Creuse oysters, whipped cod brandade and mortadella focaccia. Seasonal dishes such as melon salad with feta and green shiso bring brightness to the table, while the sepia alla Luciana, a traditional Southern Italian dish slowly simmered for eight hours, reflects generations-old Mediterranean home cooking.
Hot dishes include cod with artichoke barigoule and bagnet sauce, herb-marinated lamb chops with sea lavender and lamb jus, langoustines with naga sauce and carrot purée, alongside the much-loved Dutch asparagus. Larger dishes for sharing include salt-baked seabass, lobster broth rice with saffron aioli and a 25-day aged bone-in ribeye.
Eeuwen also introduces a refreshed cocktail and wine experience inspired by Mediterranean summers and Amsterdam’s garden terraces. Guests can enjoy low-ABV cocktails, aperitivo-style serves and rotating wines from regions including Corsica, Sicily and Cyprus, alongside the “Just 1N Case” wine experience featuring exclusive pours served by Coravin.
Inspired by the hotel’s gardens, designed by Dutch landscape designer Piet Oudolf and now blooming for the first time since the hotel’s opening, the cocktail selection incorporates fresh herbs, florals and citrus notes through serves including the Rhubarb Cobbler, Dill Cobbler, Thyme Spritz and Sea Buckthorn Negroni.
“At Eeuwen, we wanted to curate the kind of place that feels naturally woven into the everyday rhythm of Amsterdam – where guests linger over long lunches and lively dinners or simply wander in spontaneously,” comments hotel Managing Director Thomas Harlander. “This new chapter a fresh cuisine to our hotel, bringing a Mediterranean spirit to Eeuwen while remaining deeply rooted in Dutch seasonality. Rosewood Amsterdam has also launched an elevated Afternoon Tea at The Court, an experience under the direction of the hotel’s newly appointed Pastry Chef. Drawing inspiration from Dutch heritage and seasonal ingredients, the experience features an elegant selection of sweet and savoury creations served within the landmark former Palace of Justice.
