Following its debut last summer, Son Xotano, part of Annua Signature Hotels, has reopened with a series of new additions, including a new underground cave restaurant.
This year, the Mallorca hotel unveils El Celler, an eatery set within 12th-century estate’s historic wine cellar. Sourcing produce from the hotel’s gardens and nearby farms, the menu showcases seasonal vegetables, fresh herbs, and locally sourced meat and fish in a celebration of Mallorcan flavours. Dishes are deeply rooted in Mallorcan heritage yet interpreted with contemporary refinement, highlighting the natural quality of each ingredient.
The new culinary offering also introduces an open kitchen concept, bringing guests closer than ever to the creation of each dish. Designed to foster a greater sense of connection and authenticity, the open kitchen places the culinary team at the heart of the dining experience, allowing diners to observe the craft, technique and care that define the restaurant’s seasonal menus.
Outside, a vine-covered piazza invites guests to take advantage of meals enjoyed in the Mediterranean sun, alongside a poolside terrace and a series of intimate bars and lounges for sipping on carefully curated aperitifs and evening drinks.
