The Alpina Gstaad consults Wassmer Family Group for culinary programme

The Alpina Gstaad in Switzerland has engaged Wassmer Family Group (WFG), the advisory practice founded by Sven Wassmer and Amanda Wassmer-Bulgin, to deliver a culinary consulting programme for The Alpina Lounge & Terrace.

Under the mandate, WFG has reimagined the dining experience across the hotel’s F&B spaces, engineering heritage-driven menus that pair Swiss tradition with an international perspective tailored to the property’s global clientele.

The scope of the engagement extends well beyond menu architecture. The Wassmer Family Group has sourced premium ingredients and vetted new suppliers, while chef Sven Wassmer will personally oversee staff training and ongoing quality control.

The menu reads as a love letter to the Alps, reinterpreted for a global table. A grill section of locally sourced fish, meat and vegetarian cuts lets guests build their own plate, while a rotating regional cheese platter, fine charcuterie and comfort dishes are quietly elevated. Highlights include buttermilk fried chicken with a pine oil emulsion dip, crispy waffles crowned with caviar from Frutigen, and a rebuilt club sandwich of slow-brined chicken and homemade tomato marmalade.
