The Dolder Grand launches Japanese pop-up restaurant, Miyu

The Dolder Grand, Zurich, has launched a new Japanese pop-up restaurant, Miyu.

Miyu fuses the two Japanese words of beauty (美 – Mi) and gentleness (優 – Yu), both reflected in sushi master Atsushi Hiraoka’s craftsmanship. The Tokyo-born chef has honed his expertise over the past 30 years between Japan and Switzerland, and since May 2023, he has been enriching the hotel’s culinary scene with omakase restaurant, Mikuriya.

At Miyu, centuries-old Japanese traditions merge with modern influences, complemented by a selection of sake, fine Japanese whisky and premium teas. Menu items include Hamachi Sashimi, Atsushi’s Tartare, Toothfish, Wagyu Beef, Unagi Nigiri and Chawanmushi.

Miyu joins the hotel’s four restaurants, including two Michelin star The Restaurant, its new seasonal vegan and vegetarian garden venue, plus Canvas Bar which has recently been given a new makeover.

The hotel itself is keen to stand out from an art, design and wellness perspective, as well as its secluded nature location with views of the Alps and proximity to the city centre and Lake Zurich.
