The Dylan Amsterdam has launched a cocktail menu inspired by its cultural heritage. The hotel sits on the same site as the Schouwburg, the city’s first stone theatre, which opened in 1638.
That history has been channelled into an immersive drinking experience. Designed as a theatrical playbill, the menu unfolds in four acts: Stage Fright, Audition, Mainstage, and Bloopers, each representing a different chapter in the journey from opening scene to final curtain call. Rather than simply ordering a drink, guests move through a narrative inspired by the building’s historic role as a place of performance and storytelling.
One menu standout is The Dylan Thomas, a longtime house favourite named after the poet who inspired the hotel’s name. The drink also pays tribute to a lesser-known tradition from the original Schouwburg, where theatregoers were once offered oranges during performances. Today, Grand Marnier orange liqueur is mixed with single malt whisky, Spätburgunder wine, vanilla syrup, chocolate bitters and a caramelised sugar cube. The result is a contemporary expression of Amsterdam’s cultural heritage served in the very place where audiences have gathered for nearly four centuries.
The menu is served in Bar Brasserie Occo within The Dylan Amsterdam, which serves brasserie classics, curated cocktails and a signature High Wine experience.
