Rondo within The Hoxton, Holborn is teaming up with Acme Fire Cult for a series of live-fire Sunday roasts in partnership with Ilegal Mezcal. Taking place across four Sundays in October, the collaboration marks the second instalment of Rondo Residencies.
Starters include coal-roasted leeks with pipián verde and ricotta; roast Delica pumpkin with pipián rojo, mezcal honey and fig; raw sea bream with aguachile rojo, cucumber and fennel; and grilled scallop with bacon, smoked chilli butter and salsa macha.
The main course is a sharing meat platter loaded with roast beef rump, achiote chicken leg and meatball skewers (with the options of also adding slow-roast ox cheek or roast bone marrow), served alongside grilled cabbage and garlic-pecorino roast potatoes. Acme Fire Cult’s vegetable-first approach also ensures there’s a strong veggie option with abodo king oyster mushrooms, charred corn and tomatillo salsa. Ilegal Mezcal will serve a selection of Bloody Marias, Mezcal Margs and Palomas to accompany.
Acme Fire Cult will also take up residence in the hotel’s lobby as part of the Hox Sarnie Series, serving a selection of tacos daily throughout October.
