The Peninsula London welcomes Soleil by Claude for the summer

The Peninsula London will welcome a vibrant new dining concept for a summer-long pop up: Soleil by Claude

Set on the eighth-floor terrace of the hotel, temporarily taking over the space of Claude Bosi’s two Michelin-starred Brooklands restaurant, Soleil by Claude will bring the laid-back charm and flavours of the Mediterranean to the heart of Belgravia.

Dreamed up by acclaimed Chef Director Claude Bosi, the new rooftop destination celebrates the best of British produce, with dishes made for sharing and inspired by Mediterranean classics. Set against an updated backdrop to bring the spirit of Southern Europe’s coastlines, the airy, open space will host a weekend DJ to set the summer mood.

Soleil by Claude’s menus are a celebration of Mediterranean-inspired dining, all while highlighting the rich bounty of the UK’s independent farms. Highlights from the lunch and dinner menu include Polpo Carpaccio, abundant fresh seafood platters showcasing Britain’s best shellfish.

A weekly-changing basket of crudités reflects the freshest picks from local farms, alongside indulgent sharing plates such as seven-hour braised lamb shoulder with Nicoise sauce, fresh pasta dishes and flambeed sea bass ina salt crust for two.

Show-stopping desserts include playful Baked Alaska with just-picked fruits paired with homemade cream and simple seasonal fruit tarte based on the thriving fruits of the farm garden.

The terrace will feature a Pétanque pit, sponsored by Minuty, adding a playful touch to the setting. The drinks list is equally seasonal, with a hand-picked selection of rosé wines, a new signature cocktail menu created for the pop-up and a refreshed Spritz menu.

Following this pop-up, Brooklands by Claude Bosi, The Peninsula London’s two Michelin starred restaurant will reopen on 5 September 2025 with a new Autumn menu.

“With Soleil by Claude, we wanted to create something that feels like a deep breath of summer, the kind of place where time slows down a little,” comments Bosi. “It’s inspired by those long, unhurried meals you have on holiday, where the food is generous, the conversation flows, and you don’t worry about the clock. We’ve brought together the Mediterranean spirit I love with the incredible quality of British produce, all set in the incredible setting of The Peninsula London’s eighth floor.”
