The Ritz Restaurant introduces menu devoted to seafood
The Ritz Restaurant has introduced Les Saveurs de la Mer, a celebration of wild seafood and its first menu devoted exclusively to the ocean.
Curated and delivered by Executive Chef John Williams MBE alongside his kitchen brigade of more than 60 chefs, the menu will change with the seasons. Sample dishes include Orkney scallop with Datterini tomato and basil; native lobster with spiced carrot purée and verbena; wild sea bass with saffron and Menton lemon; and coconut mousseline, compressed pineapple and white rum for dessert.
Les Saveurs de la Mer explores wild seafood, highlighting the freshness, purity and diversity of ingredients from the sea. Each dish is designed to showcase the natural character of its ingredients, complemented by seasonal produce, aromatic herbs and subtle Mediterranean influences.

“With the warmth of this exceptional summer inspiring us, my thoughts naturally turned to the sea,” Williams says. “There is something unmistakably refreshing about seafood at this time of year – light, vibrant and full of delicate yet expressive flavours that perfectly capture the spirit of the season. For the first time, I wanted to dedicate an entire menu exclusively to the treasures of the ocean.
“This menu is an invitation to enjoy seafood in its finest form – elegant, balanced and deeply connected to nature. Whether through delicate raw preparations, expertly cooked fish, or vibrant coastal flavours, every course reflects my passion for creating dishes that are both refined and comforting. I hope Les Saveurs de la Mer offers a memorable culinary journey through the flavours of the ocean,” he concludes.
