The St Regis Singapore unveils reimagined F&B spaces
The St Regis Singapore has completed an extensive, multi-phase renovation which includes the reimagining of its signature restaurants and bar.
Led by design studio FBEYE International, the transformation pays homage to the Singapore Botanic Gardens, a UNESCO World Heritage Site located just minutes away. Anchoring the hotel’s culinary evolution are three new concepts, Sophia, The St. Regis Bar and The Tea Room, each offering experiences that reflect the brand’s heritage through a modern lens.
The newly introduced Sophia celebrates authentic Italian cuisine. Led by Chef de Cuisine Angelo Sergio, the restaurant brings together recipes from 11 regions of Italy. Artisanal dishes include Tagliatelle Atavi e Porcini and Bistecca alla Fiorentina, while a handcrafted tiramisu recipe has been passed down through the generations by Executive Chef Fabio Granata’s grandmother. The food offering is complemented by a selection of over 70 Italian wine labels and signature cocktails.
Elsewhere, the new St Regis Bar embodies early 20th-century Manhattan with interiors crafted from brass, marble and rich woods, while a striking birdcage-inspired back bar anchors the space. The cocktail menu by Head Bartender Kelvin Saquilayan is designed as a sensorial journey through five different decades in New York and Singapore. Signature creations include the Merlion Sling, Disco-tea-que and The Straits Mary – a local reinvention of the St Regis Bloody Mary, infused with Bak Kwa bourbon and assorted spices.
The Tea Room redefines the St Regis Afternoon Tea ritual – first introduced by Mrs. Caroline Astor in 19th-century New York – in a setting characterised by mirrored panels and floral hues. The experience is elevated with a tea sommelier brewing a choice of tea tableside and a scone trolley featuring unlimited scones with an assortment of jams and clotted cream. The adjacent Patisserie presents gourmet takeaways, from delicate viennoiseries to artisanal cakes, alongside locally roasted coffee from Tanamera Coffee & Roastery and sustainably sourced teas from Taylors of Harrogate.
