Trunk(Hotel) announces partnership with Sushi Saito
Trunk(Hotel) has announced a partnership with Sushi Saito that will see its sushi restaurants land at a number of Trunk hotels.
The collaborative effort with owner Takashi Saito will allow Trunk to offer the Japanese culinary tradition of sushi to guests both in Japan and overseas. New Sushi Saito outposts will open at Trunk(Hotel) Sapporo, slated for spring of 2027; Dogenzaka, set for summer 2027; and Kobe, opening in spring 2028.
Trunk(Hotel) is focused on creating destinations for dining experiences that are high-end yet authentic, with plans also in place to develop ‘sushi auberges’.
The partnership will also see menus created for the MICE segment, weddings and in-room service, as well as collaboration on human resource development through support for technical training of Trunk’s in-house chefs. Joint research will also be conducted, relating to new product development using flavour AI and robotics.
“The strongest reason for the formation of this partnership is our affinity with the principle of Trunk and the T&G Group of enriching society by transforming the hospitality industry,” says Takashi Saito, owner of Sushi Saito. “Though this is our first foray into the hotel business, we hope that this endeavor will lead to the advancement of sushi and other elements of Japan’s proud culinary culture.”
Nojiri, President and CEO of Trunk Co, adds: “This industry faces a multitude of challenges, including labor shortages for hotels and restaurants, sustainability in the sourcing of ingredients both domestic and imported, and the operation of facilities to global standards. I want this project to create fresh solutions to these problems and bring forth innovations from the dining industry to the hospitality industry.”
