Zurich hotel Baur au Lac has revealed the details of a fresh new culinary concept designed by Martin Brudnizki. The luxurious Swiss property has reimagined its dining offering for summer 2024, replacing its former fine dining restaurant Pavillon with a Mediterranean-inspired eatery called Marguita.

The sophisticated but laidback venue will put a contemporary spin on Mediterranean classics, with fresh seafood, grilled meats, pasta and risotto dishes all appearing on Head Chef Maximillian Muller’s lunch and dinner menus. A carefully curated wine list will accompany the food offering, thanks to the expertise of award-winning Sommelier Marc Almert.

The name Marguita is a reference to the hotel’s family tree, chosen by the Kracht family, which has owned the property for seven generations. The concept was designed to celebrate the feeling of warmth and togetherness so inherent throughout Mediterranean culture, reflected through the dishes and via top-quality service and a friendly atmosphere.

“The new restaurant is designed from the guests’ perspective,” explains Christian von Rechenberg, General Manager of the Baur au Lac. “It should be a place of well-being and relaxation. The guest should not be intimidated, as is often the case in current Michelin-starred restaurants but should have their wishes and needs fulfilled.”

As a member of the Leading Hotels of the World, the 119-key Baur au Lac has held a leading position in the international luxury hotel industry for more than 178 years.
