The Reykjavik Edition welcomes chef Diego Muñoz

The Reykjavik Edition has announced that chef Diego Muñoz will be the hotel’s guest chef for Iceland’s annual Food and Fun Festival.

Bringing his celebrated Peruvian perspective to Reykjavík, Muñoz will take over Tides, the hotel’s signature Michelin-recommended restaurant, to present a bespoke festival menu crafted with seasonal, sustainably sourced Icelandic ingredients from local suppliers.

Part of a generation of Latin American chefs who trained internationally before returning home to rediscover native ingredients and traditions, Muñoz’s cooking is defined by creativity, technical precision and a profound respect for local producers. At the helm of Oroya, the restaurant and rooftop bar at The Madrid Edition, his approach celebrates multicultural influences while remaining firmly grounded in a sense of place.

  • Oysters with yellow chili, parmesan, and extra virgin olive oil
  • Ceviche Nikkei
  • Miso-glazed salmon with confit chicken causa
  • Potato bread with butter and Rocoto Sofrito
  • Tortelloni de Aji de Gallina
  • Lúcuma and chocolate bar with raspberry and Andean granola
