Pierre Gagnaire heads up F&B at Bel Hôtel Oléron Thalasso & Spa

Michelin-starred chef Pierre Gagnaire is heading up the culinary experience at newly opened Bel Hotel Oléron Thalasso & Spa – MGallery Collection, located on Île d’Oléron in France.

The infusion of ocean and terroir is the soul of the table, with high-quality produce from fishermen, oyster farmers and local growers woven into seasonal menus that are as rooted in the region as they are refined.

The main restaurant will host a chef’s table, serving between 12 and 16 guests. Culinary journeys featuring up to seven courses unfold here, with the pulse of the nearby kitchen felt throughout. Elsewhere, beach service introduces a more relaxed mood, with aperitifs enjoyed from the comfort of loungers just steps from the water.

At the property’s bars, each sip is a tribute to mixology craftsmanship. The signature Cocktail Dune captures the wild spirit of Oléron in a glass, inspired by the meeting of windswept dunes, sea foam and the Atlantic Ocean. Crafted with regional ingredients including Pineau des Charentes, Cognac, house-made fleur de sel caramel, fresh orange juice and egg white, it offers a refined expression of the island’s landscapes, traditions and heritage.
