Stoke Park, the historic 300-acre Buckinghamshire estate, is embarking on a new phase with five new dining concepts from chef Tom Sellers set to open in October.

Sellers has created a collection of dining and drinking spaces alongside chefs Dom Robinson and Tom Phillips and HiStory Hospitality – the creative force behind the two-Michelin-starred Restaurant Story in London. The estate’s wine cellar has been curated by Carolina Seibel, Group Head of Beverage at HiStory Hospitality, and the estate’s bar and cocktail offering by Giuseppe Masala, Beverage Manager.

The Penn, named after John Penn, will be the estate’s new flagship restaurant, with a 48-cover dining room and private dining room seating eight. It will serve an à la carte menu shaped by British culinary history, seasonality, provenance and classical French technique.

Dishes will include terrine of spiced pig’s head with Scottish langoustine, roast wild sea bass with Orkney scallop, fish of the day en papillote, and venison Wellington Rossini. Produce from the Stoke Park Kitchen Garden, led by former Head Gardener of Le Manoir aux Quat’Saisons, Kate Mannery, will inform the menu as the seasons change.

The Piano Bar will focus on classic cocktails, including an elevated martini selection, alongside 100 Hills English sparkling wine and a strong representation of American wines. The Terrace & Glasshouse will bring a lighter, more informal food style to the estate with dishes including sourdough flatbread with wildflowers and herbs, seasonal salads, rigatoni with venison ragu, and fish of the day. A casual offering including pizzas and barbecue will be served on the terrace. The Tea Room will offer teas, coffees and a selection of freshly baked viennoiserie, a tart of the day using estate fruit, and signature Stoke Park scones. Elsewhere, The Clubhouse will be open daily, serving a menu of pub classics alongside Indian cuisine.

Studio Shayne Brady has overseen the restaurant and bar interiors across the estate, bringing a renewed design language to the estate’s dining spaces, in partnership with the Stoke Park and HiStory Hospitality creative teams.

The news follows the estate’s acquisition by Reliance Industries Limited in 2021 and comes after a period of extensive renovation and restoration.
