James Thurstan Waterworth, ex-European Design Director for Soho House and hospitality entrepreneur Andrew Kelly, in conjunction with the Duke of Somerset’s estate, have come together to launch The Bradley Hare.

The new country inn, located in the village of Maiden Bradley in Wiltshire, is set to open in 2021 and comprises twelve bedrooms, seven in the main house and a further five in the Coach House.

The inn will also have a ‘dine anywhere’ concept, with seasonal produce guiding its culinary approach and all-year round al fresco dining with ingredients sourced direct from the property’s gardens on offer.

 

The entrance opens into a traditional pub space, with antique chairs and tables set around the main bar, leading on to a lounge and dining area called The Snug. A light and spacious restaurant space is home to Skittle Alley, The Bradley Hare’s private dining room.

The culinary operation will be overseen by Head Chef Jake Shantos, who has previously worked for The Five Fields and The Havelock Tavern in London.

The menus will be ever-changing, adapting to the seasons and the availability from the local greengrocer, fishmonger, butcher and game dealer.

Dishes will include lamb loin and pork belly from the estate farmers as well as smoked haddock, barbequed asparagus with ricotta and wood-fired shallots.

Food will be accompanied by an extensive wine list designed to complement the cuisine and featuring traditional stalwarts alongside some more adventurous bottles.

With sustainability at the forefront, the team plans to champion the ‘waste-not-want-not’ food movement, with their ultimate aim to run a zero-waste kitchen.
