Baglioni Hotel Luna Venice, the oldest hotel in Venice, has reopened following an extensive property redesign – and it features a new fine dining restaurant. The 91-key property is now home to the Canova Restaurant by Sadler, headed by the acclaimed Michelin-starred chef Claudio Sadler.

The venue, which opened this month, is a contemporary restaurant that focuses on modern, healthy Italian cooking. Seasonal Venetian produce is put to excellent use for menu highlights such as lobster tagliolini, red mullet au gratin with Venetian lagoon fish stew, and rossini pigeon. An innovative seven course tasting menu that incorporates a sophisticated balance of flavours and flare is also available.

The hotel’s redesign drew inspiration from Venice’s eclectic history and cultural present. Spearheaded by the Italian architect and interior design duo Spagnulo and Partners, the reimagined space celebrates diverse Venetian traditions and materials. New marble inlaid flooring and grand chandeliers  in antique Murano glass – have been installed throughout the hotel entrance and fireplace lounge, complementing the existing modern furnishings. In the Canova Bistrot, which overlooks the canal and the Royal Gardens, handcrafted wooden tables and Rubelli designed armchairs breathe new life into the informal space, designed for light lunches of classic Italian dishes such as Milanese cutlet, Venetian pasta and caprese salad.

Located just behind the Grand Canal, Baglioni Hotel Luna dates back to the 12th century, reportedly housing the Knights Templar in 1118. By 1574, the property was already known as ‘Locanda della Luna’ and in the 18th century was decorated with frescoes by students of the renowned artist Giovanni Battista Tiepolo, today recognised as one of the world’s greatest fresco painters.
