Five-star resort Hilton Seychelles Northolme Resort & Spa has unveiled two new restaurants; the final development in its refurbishment project.
The recently launched outlets, Wave and Mahé, embody distinct culinary personalities and offer guests and locals a wider variety of dining choices.
Wave reflects the hotel’s environmentally conscious focus, whilst Mahé’s menu shines a light on contemporary Creole cuisine, popular local dishes and fresh seafood.
Wave’s waterfront position, which leads down to a new Gin Bar on the lower deck, offers innovative dishes, local ingredients to reduce food miles and healthy creations.
Options vary from a ‘blended burger’ and seafood escabeche, with scallops, prawns and calamari served with a passion fruit salsa, to fresh poké bowls and salads. The restaurant’s menu also incorporates a variety of fish, including smoked marlin and red snapper – all of which is sustainably sourced.
With Wave offering a cool, beach club atmosphere, Mahé provides a fine dining experience. Working with local chefs, the restaurant invites guests to enjoy a taste of the Seychelles with a series of regional dishes.
Providing panoramic views across the Indian Ocean and using locally sourced ingredients, the menu features dishes such as a spin on a Niçoise salad using smoked marlin; octopus served with cajun potatoes, creole sauce and beetroot purée; a traditional coconut curry; and roasted spiced pineapple, served with local Takamaka Rum.
