La Mamounia hotel in Marrakech has announced its collaboration with Chef Simone Zanoni, starting in September 2025.

Zanoni will take on the hotel’s Italian restaurant, in a reimagined setting. The venue will embrace the vibrant flavours of southern Italy, offering a menu of refined yet comforting classic dishes.

Through this collaboration, La Mamounia reaffirms its commitment to delivering an elevated dining experience, where the bold artistry of Italian cuisine meets the timeless elegance of Moroccan refinement.

Zanoni has recently emerged as a key figure in contemporary Italian gastronomy. As Head Chef of the Michelin-starred Le George in Paris, he intertwines culinary tradition with modernity; a style that aligns with La Mamounia’s values.

La Mamounia marked its centenary in 2023, and to celebrate, the hotel’s timeless-yet-modern blueprint received a renovation by Parisian architects Patrick Jouin and Sanjit Manku. The project won Best Renovation at AHEAD MEA 2023, the Awards for Hospitality Experience and Design.
