Two-Michelin-starred chef Niall Keating is launching a new dining experience at Manchester’s Stock Exchange Hotel.

Named ‘Tender’ in a nod to the care put into crafting each dish, the new restaurant will offer a weekday brasserie lunch, a la carte dinner, afternoon teas, a special Sunday roast and a chef’s table and special tasting menu. It is set to open its doors on 5 June.

“We couldn’t be happier to be partnering with Niall Keating for Tender and bringing his culinary expertise to the hotel,” said Gary Neville, co-owner of the Stock Exchange Hotel alongside Ryan Giggs and hotelier Winston Zahra. “His vision to create versatile and accessible dining options is exactly what we’ve been looking for, to allow everyone visiting Tender to find the right experience for them.”

“From when I first walked through the doors of the hotel into the dining room, I knew this was the place for me and that we could create something really special,” said Keating. “I want a space that feels vibrant, warm and energetic, that brings to life the history of the stock exchange roots of the hotel, while providing an upscale and comfortable brasserie dining experience.”

In addition to the main dining room, Keating will also be behind private dining experiences at ‘The Bank’, an intimate space for up to 12 guests. A music programme will also be announced shortly.

Keating, who mastered his craft in the kitchens of Restaurant Sat Bains, UK, and Benu, San Francisco, US, earned two Michelin stars for his menus at The Dining Room at Whatley Manor Hotel. His commitment to sustainability earned him a prestigious Green Star from Michelin in January 2021, making him a pioneer in eco-conscious gastronomy.

Tender’s opening follows the 2022 closure of former Stock Exchange Hotel restaurant The Bull & Bear, which was run by the Michelin-starred chef Tom Kerridge. The hotel remains home to the award-winning Schofield’s Bar and a 100-cover cocktail bar called Sterling.
