Molitor Paris Hotel unveils new nature-inspired restaurant
Molitor Paris Hotel has revealed a brand-new, nature-inspired restaurant, Molitor Jardin d’Hiver, due to open on 17 September 2025.
Set alongside the hotel’s pool, the space has been transformed into a botanical glasshouse with garden-style furniture, a wrought-iron gazebo, and billowing Toile de Jouy curtains.
The Parisian restaurant’s standout feature is a sculptural central bar, around which mixologists craft custom cocktails using floral infusions, fresh herbs, exotic citrus and rare spices. The bar boasts views of both the main dining room and the pool, making it the social hub of the space.
Meanwhile, the venue’s strong visual identity inspired Chef Tony Goncalves to create a sustainable, ingredients-focused menu centred on nature, allowing ingredients to shine. Signature dishes include beef tartare with tagetes, creamy mussels and clams with leeks, and spelt risotto with apricots and figs. For dessert, Pastry Chef Camilla D’Ambrosio brings comforting flavours to the table with indulgent creations including thin fig tart, warm apple pie with salted butter caramel sauce, and pear carpaccio with honey, walnuts and blue cheese.
