Mollie Aspen welcomes Chef Ludo Lefebvre’s Petit Trois

Mollie Aspen will welcome French bistro, Petit Trois, this winter.

The new restaurant will mark the third location for Petit Trois and the first outside of Los Angeles for Chef Ludo Lefebvre. An updated interior design aims to capture the cozy bistro-style spirit of the brand.

In Aspen, the menu will blend bistro classics with modern dishes, driven by local ingredients that connect guests with the surrounding Aspen landscape. An extensive wine list curated by sommeliers Dustin Wilson and Sabato Sagaria will focus on French and California wines, with an emphasis on by-the-glass selections from top producers.

With over 12 years of experience training under culinary legends in France, Lefebvre has earned accolades including a Michelin Star, Relais & Châteaux’s World’s 50 Greatest Chefs and James Beard Award nominations.

“Colorado and Aspen both hold special places in my heart,” he comments. “Partnering with the team at Mollie to bring Petit Trois to one of my favourite towns is a dream come true. I have spent summers and winters in Aspen and love that it offers something for everybody year-round. I am looking forward to adding my culinary stamp on the town.”
