Nobu Hotel Madrid has unveiled its signature Nobu restaurant, the culinary centrepiece of the new hotel and the first Nobu restaurant in the Spanish capital, set to open on 1 September, 2026.
At the heart of the hotel’s tri-level dining destination, alongside an all-day Lobby Lounge and an intimate cocktail bar, Nobu Restaurant will bring Chef Nobu Matsuhisa’s globally celebrated cuisine to Madrid for the first time. The menu will showcase Nobu’s signature fusion of Japanese techniques and South American influences, from world-renowned sushi and sashimi to beloved classics including Black Cod Miso and Yellowtail Jalapeño.
Alongside these established favourites, the Madrid restaurant will reflect its setting through select local ingredients, including Canarian sea bass and Mediterranean tuna. Dishes will be complemented by an extensive wine selection bringing together leading Spanish producers, established international names and lesser-known discoveries.
Designed by architecture and design studio Gronda, the restaurant translates Nobu’s Japanese heritage through a warm and contemporary lens. Bronze-toned ceilings, dark stone flooring and timber panelling create an intimate atmosphere, balanced by floor-to-ceiling windows that connect the space to the streets of Madrid. Textured upholstery in earthy and neutral tones brings warmth to the dining room, while an open kitchen offers guests a view of the culinary team at work.
On the lower-ground-floor, a cocktail bar will provide an intimate contrast to the energy of the restaurant above. Recalling the building’s former life as a bank, bathrooms incorporate original features including thick vault walls and safety deposit boxes, creating an unexpected connection to the history of the setting. Open daily with a live DJ from Wednesday to Saturday, the bar centres around a high-fidelity vinyl DJ system, while the menu focuses on martini-style cocktails and twists on local classic dishes.
Crowning the hotel on its seventh floor, The Rooftop offers panoramic views of the Madrid skyline. Conceived as the city’s ultimate sunset destination, an approachable, effortlessly stylish atmosphere will be soundtracked by live DJs from Wednesday to Saturday. Open all week from 5pm to midnight, drinks will focus on aperitivo-style cocktails inspired by Mediterranean summers, including spritzes, light highballs and refreshing seasonal serves. A relaxed, shareable menu will include dishes such as sea bass and coconut ceviche, quesquilla shrimp with shiso salsa, and elevated interpretations of Spanish favourites.
